Mexican Grain Bowls

Easy Mexican-inspired grain bowls made with our Chipotle & Red Pepper paste. Served with homemade lime crema, guacamole, and corn salsa.Ingredients
Method
Ingredients
- 2x 250g pouch microwave grains of your choice
- 4 tbsp Bart Chipotle & Red Pepper paste
- 400g tin black beans drained and rinsed
- Extra lime wedges and chopped coriander, to serve
Crema
- 150g sour cream
- ½ lime, zest and juice
- Bart black pepper, to taste
Quick Guacamole
- 2 ripe avocados
- 1 lime, juice of
- Small handful fresh coriander, finely chopped
- ¼ small red onion, finely chopped
- Salt and black pepper, to taste
Corn salsa
- 1x 198g tin sweetcorn, drained
- 1 medium tomato, diced
- ¼ small red onion, finely chopped
- Small handful fresh coriander, finely chopped
- 1 lime, juice of
- Salt and pepper, to taste
Method
1. Mix sour cream, lime zest, lime juice, and black pepper in a small bowl. Set aside.
2. In a separate bowl, mash the avocado with lime juice to your desired consistency. Stir in chopped coriander and onion, then season with salt and pepper.
3. Combine all the corn salsa ingredients in a medium bowl and mix well.
4. Heat the grains (or enjoy them chilled) and place them in a large mixing bowl. Stir in the Chipotle & Red Pepper paste until evenly coated.
5. Divide the grains and black beans between 4 bowls or meal prep containers. Top with crema, guacamole, and corn salsa.

6. Garnish with fresh coriander and serve with an extra lime wedge. Enjoy immediately or store for meal prep.
