- 1 ripe nectarine, sliced
- Olive oil
- 2 slices sourdough
- 4 tbsp soft goat’s cheese
- 2 slices prosciutto
- Honey
- Fresh rocket
- Bart Pink Peppercorns, lightly crushed
Method
1. Brush the nectarine slices with olive oil. Grill on a griddle pan for 1–2 minutes per side until charred and juicy. Remove from the heat and set aside.
2. Toast your sourdough until golden.
3. Spread the goat’s cheese generously onto the warm toast. Drape over prosciutto and top with warm grilled nectarine. Add a few rocket leaves and drizzle with a little honey. Finish with a sprinkle of the crushed Pink Peppercorns.
